Aloo Gobi

Aloo is referred to any potato in Hindi. Gobi is referred to Cauliflower.

Ingredients needed:
1 lb of Aloo & Gobi,
1-2 Tblspn of Curry Gravy Masala,
2-3 Tblspn of any edible oil,
1-2 Tblspn of tomato paste,
1-2Tblspn of plain yogurt or sour cream.

Optional:-Add 1teaspn of ground fresh ginger AND/OR  1/2 -1 teaspn. of ground Jalapeņo/Serrano Pepper.

Wash red potatoes and cut into four pieces. Cut Cauliflower in in equal size flowerets so potatoes and Cauliflower will cook in same time

  • Preparation:

    Heat 2-3 Tblspn of oil in the pot,
    add 1-2Tblspn of Curry Gravy Masala.
    Roast it on low fire for 30 seconds. Add tomato paste and yogurt or sour cream.
    Cook for 1 minutes until everything is well incorporated. Add Aloo and Gobi.
    Sauté well to incorporate the curry paste. Adjust salt and to your taste. Add one Serrano or Jalapeno pepper with top stem on. Add chopped cilantro. Add 1/8 cup of water (as cauliflower will sweat and will add some more water). Mix well. Cover & cook on Low fire until aloo is tender. Garnish with chopped cilantro and serve. If the gravy is watery, Boil it off on HIGH heat.

  • Cauliflower flowerets should be twice the size of cut potatoes as potatoes take longer to cook.
  • You can cook the potatoes just for few minutes before adding the cauliflower.
    Add 1/2 can of diced tomatoes with jalapenos. Adds great taste.
  • Add the Chopped leaves of the Cauliflower for great taste.
  • Add ground Ginger And/Or ground Jalapeņo/Serrano Pepper to your taste for added taste.
  • Grind Jalapeņo/Serrano Pepper in food processor and freeze in ice cube tray or in ziplock bag in thin layer to break and add to any dish any time. Do the same with ginger. You can grind both the ingredients (ginger and Jalapeņo/Serrano Pepper)in desired portion.
  • Freeze Tomato Paste  in 1 TblSpn. measure in ice cube tray or in ziplock bag in thin layer to be able to break it and add to any dish any time.
